FOR THE SHALLOT VINAIGRETTE
1/2 shallot, minced
1 cup champagne vinegar
1 teaspoon sugar
1 tablespoon dijon mustard
2 cups extra virgin olive oil

1 pound butter
1/4 cup hickory wood chips
